At first glance, the ingredients for this recipe look great and I was really looking forward to trying this Tuna Caesar Salad Recipe from Good Chef Bad Chef.   I was somewhat dismayed though when I started to read the recipe.  Find out why I gave this recipe a rating of 6.25/10

None of the steps to this recipe are particularly difficult, however the recipe itself is not at all detailed.  There is little guidance given on how to make the croutons, no step by step guide to making the dressing, no instructions on when to add the tuna, herbs or pickled anchovies.  The recipe suggests using a vinegar reduction, but gives no guidance on how to do this.  It would have been more helpful if links had been provided to the various more complex steps, if they weren’t going to be included in the recipe. 6/10

The recipe appears to have only 6 steps to it, but this is because there are a large number of steps (such as making the dressing), missing.   There are quite a few elements that require cooking (croutons, bacon, tuna) and the recipe does take some time.  6/10

Personally I think that there too many competing flavours in this recipe.  The dressing while pleasant, was definitely a caesar vinaigrette, rather than a more traditional caesar dressing.  The vinegar reduction made the dressing quite overpowering.   Including tuna, bacon and egg in the recipe is probably unnecessary and perhaps excluding the bacon would have been better.  6/10

The dish wasn’t unpleasant, but I would describe it as a tuna, bacon and egg salad, rather than a Tuna Caesar Salad.  The recipe should be re-written to give more guidance on the preparation required and the bacon should be removed.  I would also substitute the dressing for a caesar dressing. 6.25/10

Having previously tried Martha Stewart’s Caesar Salad with Spicy Shrimp, I thought I would try another shrimp recipe and selected Shrimp Caesar Salad from MyRecipes.   The recipe is not advertised as a low-fat caesar salad, but it is only 295 calories a portion.

The food

The simplicity and speed of preparation in this recipe was reflected in the flavours. The salad was quite bland.  The shrimp should have been seasoned and the caesar dressing was too citrusy and a little watery. The Sriracha was barely noticeable and a little more might have added something to the recipe. 5/10

Overall

At first glance and looking at the ingredients, the recipe looked as if it could have some really interesting flavours, but in end it was very disappointing and so much more could have been done to enhance it.  I have no doubt that the recipe is low-calorie, but it is also low taste.  Not one I will be trying again. 6.75/10

The ingredients for this Caesar Club Sandwich from Food Network, really appealed to me.  The traditional caesar all crammed into delicious ciabatta bread. This is the first time that I have prepared a dressing using anchovy paste and I was interested to see how the flavour would differ to anchovies in oil.

I gave this recipe a fabulous 8/10!

There is quite a bit of prep for this dish, but most of the ingredients that need to be cooked, can be prepared simultaneously. I used boneless chicken breast, which didn’t take as long to cook as the recipe suggests. 7.5/10

The food

This caesar club sandwich is packed with fabulous flavours. The dressing is really tasty, it could probably have done with being a little bit thicker.  The flavours in the dressing were quite zesty and the anchovy paste seemed to add a slightly more smoky flavour than anchovy fillets. The pancetta and chicken work really well together and the flavours complimented each other.  The sun-dried tomatoes were strong, but as long as you enjoy their flavour, they are great in this dish.  The parmesan and rocket add a final caesar twist to this club.  I used individual ciabatta, which were lovely and fresh.  They were  quite small and with hindsight a bigger loaf might have worked better, to contain all the fabulous ingredients.  8.5/10

Overall

I thought this sandwich was amazing.  From the lovely fresh ciabatta, to the intense sun-dried tomatoes and the salty pancetta, every mouthful was a flavour packed winner.  I will definitely be trying this again and this recipe deserves the very high rating of 8/10.

This Low-fat Chicken Caesar Salad recipe from Taste.com.au, combines some of the traditional caesar salad ingredients, with some low-fat variances to produce a delicious and healthy chicken caesar salad.

I gave this recipe a well deserved rating of 7.75/10

The chicken is cooked in the oven, but doesn’t take too long.  I actually cooked the chicken for a little longer than the recipe suggested, as you need to be careful to make sure that it is thoroughly cooked.  7/10

The croutons could have done with being at a slightly higher temperature to give a more golden colour, but for a low-fat option the flavour was very good.  Although there was very little prosciutto, it added a great flavour to this recipe. The chicken being steamed in a parcel, was lovely and moist and had absorbed the lemon and garlic.  The dressing was the best low-fat caesar dressing that I have tried so far, there were a lot of ingredients, but they all worked really well together to produce a light dressing, which still had the great caesar flavour. 8/10

Overall

If you are watching your weight, but still crave a great caesar salad, then this recipe is definitely a winner.  As there is no oil used, the dish is very light, but still maintains a fab mix of flavours and you don’t feel that there is anything missing. The dressing is great and it should be easy to make up in batches if you want something light to hand when the caesar salad cravings start. 7.75/10

This Mixed-leaf Caesar Salad from Delia Online looked like a quick and easy recipe and Delia Smith recipes are usually straight forward and relatively simple.  I made the recipe as a main dish, but with hindsight it would work better as a side dish.

I was really looking forward to the garlic, parmesan croutons, which smelled delicious while they were cooking.  The end result was a bit too subtle and a little more parmesan would have enhanced the flavour.  Having a mix of lettuces added a good dimension to the salad. The lime juice added a tangy flavour to the dressing and mixing the parmesan through with the dressing gave a lovely cheesy taste. I enjoyed the anchovies in the salad, but if you are squeamish about them you might find them overpowering. 8/10

Although not containing any particularly unusual ingredients, the combination of flavours created a pleasant salad.  I wouldn’t make this salad as a main dish, but it would definitely add a great dimension as a side dish. 7/10

In a change from the usual Chicken Caesar Salad, this week I tried the Crab Salad with Caesar Vinaigrette from Food & Wine. I’m presuming that the jumbo lump crabmeat would be best fresh in this recipe, but as I was unable to get fresh crab, I used tinned.

This dish was different to a traditional caesar salad and the crab made a delicious change to the usual chicken.   I was unable to get white anchovies, but I’m not sure whether it would have made any difference to the flavour. The vinaigrette was tasty and had subtle hints of caesar, but that was about as close to a caesar as this salad got.  The roasted red peppers had a lovely sweet flavour. 7/10

This was an enjoyable salad in itself and the peppers added a great flavour.  7.25/10

With the seasons changing and a crisper feel to the air, thoughts turn to Halloween and pumpkins.  I was looking for a great pumpkin caesar salad recipe and could only find this Caesar Salad with Pumpkin Croutons and Spiced Pumpkin Seeds from The Local Palate, so I that’s what I chose!  The original is made with kale, but I chose to make it with romaine lettuce.

The basic ingredients are fairly standard, but the pumpkin flesh and seeds add a lovely seasonal twist to a basic caesar salad recipe. The smell of the pumpkin seeds cooking was heavenly and I my mouth was watering before I had managed to finish preparing the recipe.  I used romaine lettuce rather than kale, so I’m not sure how much difference that would have made to the flavour of the finished salad.  The flavours were nicely rounded and the spicy pumpkin seeds tasted just as good as they smelled.  The pumpkin could probably have take a little more seasoning, but it all worked well together. 8/10

For a slightly different kind of caesar salad, this worked really well and is definitely worth a try when pumpkins are in season.  I think that there is more that could be done with the pumpkin itself and trying this recipe has inspired me to experiment with cooking pumpkins. 7/10
