For a quick light lunch, I tried out the Grilled Chicken Caesar Salad Wrap recipe from Jamie Cooks It Up. This includes a homemade Creamy Caesar Dressing. The recipe took a little longer than I was expecting as the dressing and chicken took a little while.

Chicken Breasts, Olive Oil, Tortilla Wraps, Romaine Lettuce, Baby Cherry Tomatoes, Red Onion, Parmesan Cheese
Lemon Juice, Red Wine Vinegar, Garlic, Mayonnaise, Milk, Sour Cream, Rapeseed Oil. 8/10
Level of difficulty
The preparation and cooking was all very straightforward. The dressing can be made in a liquidiser or food processor. Care needs to be taken that the chicken is throughly cooked through. Don’t over fill the wraps, otherwise it will be difficult to fold them. 8/10
Time taken to prepare
The creamy caesar dressing takes a little while, as it contains quite a few different ingredients. Grilling the chicken, is not quick and there are quicker ways to cook the chicken. 7/10
The food
I was unable to get spinach tortilla wraps, so I used plain tortilla wrap instead. The dressing was really creamy, although I didn’t use very much, I have some left over to use in other dishes.
The chicken breast was quite big and so was a little bit dry from grilling. I prefer to butterfly the chicken breast and pan fry, as this tends to make it a little more moist and takes less time to cook. I don’t mind red onion, but I would omit it next time, as the flavour was a bit overpowering. 7/10
Overall
Other than my inexpert wrapping and a little bit too much onion, this was a really lovely recipe and one that I would definitely try again. 7.5/10
