Crab Salad with Caesar Vinaigrette

In a change from the usual Chicken Caesar Salad, this week I tried the Crab Salad with Caesar Vinaigrette from Food & Wine. I’m presuming that the jumbo lump crabmeat would be best fresh in this recipe, but as I was unable to get fresh crab, I used tinned.

The food

This dish was different to a traditional caesar salad and the crab made a delicious change to the usual chicken.   I was unable to get white anchovies, but I’m not sure whether it would have made any difference to the flavour. The vinaigrette was tasty and had subtle hints of caesar, but that was about as close to a caesar as this salad got.  The roasted red peppers had a lovely sweet flavour. 7/10

Overall

This was an enjoyable salad in itself and the peppers added a great flavour.  7.25/10

I’m not familiar with Martha Stewart recipes, but the Caesar Salad with Spicy Shrimp recipe can be found on the Martha Stewart website.  There are a number of other great looking recipes on there, that I’m looking forward to trying. It’s always good to try an alternative to the classic chicken caesar salad recipe.

This recipe wasn’t at all difficult, care should be taken though to make sure that the tortillas don’t overcook. The dressing was very simple as the mayonnaise was pre-made. 8/10

Time taken to prepare

It took about 15 minutes in total.  There isn’t a great deal of preparation and both the tortillas and prawns take only a few minutes to cook. 8/10

The food

This was a spicy prawn recipe, so I wasn’t expecting the usual caesar flavouring.  I think that I probably used a little bit too much chilli powder on the tortillas, which made them a bit overpowering, they were also a little overcooked.  The prawns on the other hand could have had a little more seasoning.  The flavours were pleasant but the chilli was the most distinctive flavour.  The dressing was a little bland and the flavour was not particularly complex. 6/10

Overall

The salad was quick and simple but I think I was expecting a bit more.  If I made it again, I would use less chilli and make my own caesar dressing. The recipe gained points for simplicity and quickness, but lost points for flavour. This really is a simple caesar salad recipe. 7.25/10

I love fresh tuna and had been looking for a Tuna Caesar Salad Recipe to try.  This caesar salad recipe from Hell’s Kitchen really appealed to me, it looks amazing and had some fantastic ingredients.  I wasn’t able to buy fresh anchovies, so I used anchovy fillets in olive oil. This recipe scored 7.25/10, read on to find out more.

Level of difficulty

The recipe was very simple and easy to prepare.  Achieving the correct balance of flavours in the dressing, is probably the only  area that might cause problems. 7/10

Time taken to prepare

This was a very quick recipe, the tuna is seared for 2 minutes on each side, this time should be adjusted, depending on the thickness of the tuna.  The caesar salad dressing takes the longest time, but everything can go into a liquidiser or food processor. 8/10

The food

The tuna was simply prepared and really delicious.  The steaks were quite thin, so while they were still pink, they probably didn’t need as much cooking.  I didn’t use fresh anchovies, so that might have  had a slight difference on the flavour, but that the balance of flavours in the caesar salad dressing was overpowered by the amount of dijon mustard that the recipe required.  I think that it would have benefited from a little more grated parmesan in the caesar dressing as well. 7/10

Overall

This is a very quick and simple recipe to throw together and would make a perfect lunch or light supper meal.  The tuna makes a lovely change to the usual chicken caesar salad. For me, the recipe was missing croutons and I would add them, if I made it again.  7.25/10
