Not only can you make amazing sandwiches and desserts on it but you can also grill other things as well (like the cooked chicken for the recipe could easily be cooked on the Panini press, shrimp, veggies…) without going into the scorching Arizona summer heat. Gordon Ramsay’s Devilled Caesar Salad with Parma Ham

I have previously tried Gordon Ramsay’s Big Caesar Salad Recipe, so I was interested to see that there was a low-fat caesar salad recipe in his Healthy Appetite cookbook.   I rated his last recipe 7.75/10, so I was keen to see whether his Devilled Caesar Salad with Parma ham would get the same rating.

Ingredients

Parma ham, Olive oil, Ciabatta, Baby gem, Marinated fresh anchovy fillets, Parmesan, Garlic, Salted anchovy fillets, Paprika, Worcestershire sauce, Natural yogurt 7/10

The recipe isn’t difficult, but does require frying the parma ham and toasting the ciabatta 7/10

The recipe doesn’t take long to prepare, but it takes about 10-15 minutes to make the dressing, fry the ham and ciabatta 7/10

The food

The dressing was low-fat and used natural yogurt as a base.  There was a little to much garlic in the dressing for me, so I would probably use a little less. The parma ham is quite salty, which overpowered the salad a bit.  Using less ham would give a better balance.  I haven’t used fresh  anchovy fillets in a salad before and they weren’t as strong as I thought they might be 7/10

Overall

As a lower-fat caesar salad, this was pleasant and if you rebalance the parma ham and garlic, then overall it’s a tasty salad.  The portion isn’t particularly large, so this is definitely a side salad 7/10

Caesar salad is much maligned in the cafe world, particularly in the 90’s and early 00’s. So often served with slathering of mayonnaise, oversized croutons and horrid violently salty anchovies and lots of random additions. Made right though this salad can be a beautiful balance of textures and flavours that will have you changing your mind about the career salad.

First up the quality of your ingredients is essential.  I know this is the case with everything we cook and make, but when serving a salad there is nowhere to hide. For me the most important part is making sure your lettuce is crisp and fresh. I love using cos hearts as the leaves are sweeter and crunchier.

Skinny Caesar Salad – Ginger & Olives

As caesar salads can sometimes be high in calories, it’s always good to try a low fat version, to see whether the authentic caesar flavour has been captured.  This Skinny Caesar Salad from Ginger & Olives looked good.

Ingredients

Chicken, Paprika, Chilli Powder, Parmesan cheese, Olive oil, Iceberg lettuce, Sandwich bread, Low fat quark, White wine vinegar, Egg yolk, Dijon mustard, Anchovy fillet, Worcestershire sauce. 7/10

The recipe is simple, but not particularly detailed.  It might have been useful to have some guidance on how long to cook the chicken for.  6/10

It didn’t take long to prepare, although the chicken does need to be cooked thoroughly.  7/10

The food

I wasn’t sure how the dressing would taste, using quark rather than a mayonnaise, but it was pleasant. The dressing does contain raw egg yolk, so it is best to avoid it if you are pregnant or would prefer not to eat uncooked egg.  I would probably have had a small amount of garlic in there just to add a balance to the vinegar.  The chicken was tasty, but there was no guidance on how much paprika and chilli powder to use.  If I was to make the recipe again, I would probably use a little more to give a bit more kick. I prefer romaine lettuce in my caesar salad, but the iceberg lettuce was crunchy. 6/10

Overall

For a low fat caesar salad, this is quite pleasant.  It wasn’t particularly rich and I wouldn’t say that the dressing was really a caesar dressing, but with a few tweaks I think it could be a little more authentic. The seasoning on the chicken added a nice flavour to the salad, which might otherwise have been a little bland. 6.5/10

Pulled Chicken Caesar Sandwiches – Iowa Girl Eats

I really enjoy a chicken caesar salad wrap, so I thought I would try this Pulled Chicken Caesar Sandwich from Iowa Girl Eats.

Chicken, Caesar dressing, Parmesan cheese, Parsley flakes, Romaine lettuce, Sandwich thins, Butter, Garlic powder. 7/10

The recipe is straightforward.  You do need to keep an eye on the sandwich thins though, to make sure they don’t burn. 8/10.

The chicken takes a while to poach and the recipe then suggests waiting for it to cool a while before mixing it with the dressing and other ingredients.  It’s not a throw it together sandwich. 6/10

Pulled Chicken Caesar Sandwich

The food

I find poached chicken a little bit bland, but it does stay fairly juicy when cooked this way. I liked the way the chicken, dressing and parmesan are mixed together over a heat, before going into the bread.  A good quality caesar dressing is essential for this recipe. The garlic powder was a subtle flavouring, as fresh garlic would probably have been overpowering in this recipe. I have never cooked with sandwich thins before and I’m not sure I really like them.  I would probably use pitta or a bap if I made it again.  7/10

This was a great sandwich and as if you prepare the chicken in advance, it wouldn’t take long to cook. 7/10

Buttermilk Chicken Caesar Salad – Martha Stewart

I have tried a couple of Martha Stewart recipes and this Buttermilk Chicken Caesar Salad looked popular and had some slightly different ingredients.  It was only when I started preparing it, I realised that this is quite a low-calorie chicken caesar salad.

Low-fat buttermilk, Lemon juice, Garlic, Parmesan cheese, Chicken breast, Multigrain bread, Olive oil, Light mayonnaise, Romaine lettuce, Radicchio. 6/10

Level of difficulty

The recipe doesn’t have any particularly difficult steps, however care always needs to be taken when cooking chicken, that it is cooked through. 7/10

The chicken needs to marinate before cooking, which takes a bit of time.  The recipe suggests a minimum of 15 minutes, which is fine to prepare the remaining ingredients.  However, if you want to marinate for longer, you will need to allow plenty of time.  Cooking the chicken also takes some time. 6/10

The food

The dressing was light and the buttermilk made it quite creamy without being particularly high calorie.  The croutons were different and definitely a healthy option, using a minimal amount of olive oil.  The flavours weren’t disappointing, but nor did they really jump out as particularly exiting. 6/10

Overall

The recipe isn’t labelled as low-calorie, however there calorie content of this makes it quite a healthy chicken caesar salad.  If you’re looking for a light option caesar salad, then this is one to try, but personally I think that there are recipes that are equally low-calorie, but have more flavour. 6.25/10

The recipe is simple, but there are a few steps to it.  Most of the recipe can be cooked in the same pan though, one after the other, which is fairly easy. 8/10

The chicken, bacon, croutons and egg all need to be cooked.  The recipe suggests one after the other, but if you prefer to cook them simultaneously the recipe wouldn’t take long. 8/10

The food

The salad was delicious.  It had the best homemade caesar dressing recipe that I have tried so far.  I would probably use slightly less anchovy next time, but the dressing was rich with a  great balance of flavours.  The salad itself had a lovely combination of chicken, crispy bacon, crunchy croutons and fab poached egg, which all worked really well together.  8/10

Overall

I really enjoyed preparing and eating this chicken caesar salad recipe.  Caesar traditionalists would probably argue that the ingredients have strayed a bit too far from Caesar Cardini’s original, but there is no doubt the salad is great anyway and is well deserved of a rating of 8/10
