Gordon Ramsay’s Devilled Caesar Salad with Parma Ham

I have previously tried Gordon Ramsay’s Big Caesar Salad Recipe, so I was interested to see that there was a low-fat caesar salad recipe in his Healthy Appetite cookbook.   I rated his last recipe 7.75/10, so I was keen to see whether his Devilled Caesar Salad with Parma ham would get the same rating.

The recipe isn’t difficult, but does require frying the parma ham and toasting the ciabatta 7/10

The recipe doesn’t take long to prepare, but it takes about 10-15 minutes to make the dressing, fry the ham and ciabatta 7/10

The food

The dressing was low-fat and used natural yogurt as a base.  There was a little to much garlic in the dressing for me, so I would probably use a little less. The parma ham is quite salty, which overpowered the salad a bit.  Using less ham would give a better balance.  I haven’t used fresh  anchovy fillets in a salad before and they weren’t as strong as I thought they might be 7/10

Overall

As a lower-fat caesar salad, this was pleasant and if you rebalance the parma ham and garlic, then overall it’s a tasty salad.  The portion isn’t particularly large, so this is definitely a side salad 7/10

Pulled Chicken Caesar Sandwiches – Iowa Girl Eats

I really enjoy a chicken caesar salad wrap, so I thought I would try this Pulled Chicken Caesar Sandwich from Iowa Girl Eats.

Chicken, Caesar dressing, Parmesan cheese, Parsley flakes, Romaine lettuce, Sandwich thins, Butter, Garlic powder. 7/10

The recipe is straightforward.  You do need to keep an eye on the sandwich thins though, to make sure they don’t burn. 8/10.

The chicken takes a while to poach and the recipe then suggests waiting for it to cool a while before mixing it with the dressing and other ingredients.  It’s not a throw it together sandwich. 6/10

Pulled Chicken Caesar Sandwich

The food

I find poached chicken a little bit bland, but it does stay fairly juicy when cooked this way. I liked the way the chicken, dressing and parmesan are mixed together over a heat, before going into the bread.  A good quality caesar dressing is essential for this recipe. The garlic powder was a subtle flavouring, as fresh garlic would probably have been overpowering in this recipe. I have never cooked with sandwich thins before and I’m not sure I really like them.  I would probably use pitta or a bap if I made it again.  7/10

This was a great sandwich and as if you prepare the chicken in advance, it wouldn’t take long to cook. 7/10

Caesar Pasta Salad Recipe – MyRecipes

I may have mentioned before that pasta is almost as high on my list of favourite foods, as Caesar Salad.  When you basil to the combination, you have a pretty perfect meal in my opinion.  The Caesar Pasta Salad Recipe from MyRecipes looked like a great dish to try.

Most of the ingredients can be prepared while the pasta is cooking.  The recipe does however recommend letting the pasta stand for 10 minutes, which adds to the preparation time.  The dressing was very quick. 7/10

The food

Pasta, parmesan and basil are always a great combination for me.  There was lots of parmesan used in the recipe and the dressing added a lovely caesar twist.  The dressing was a bit citrusy for me, but was still pleasant.  The flavour overall was pleasant, but didn’t really have a great deal of depth. 7/10

Overall

This was a good simple pasta dish, which would be easy to put together in a hurry and didn’t really require any special ingredients. If you’re looking for a quick supper dish for the family this would be great, but it’s not really a special occasion recipe. 7/10

This Mixed-leaf Caesar Salad from Delia Online looked like a quick and easy recipe and Delia Smith recipes are usually straight forward and relatively simple.  I made the recipe as a main dish, but with hindsight it would work better as a side dish.

The dressing can be tricky if you haven’t made a mayonnaise before.  It’s important to make sure that the ingredients are measured correctly, if you want a creamy dressing. 7/10

The croutons and dressing take a little while to prepare.  For a relatively simple recipe, that would make a great side dish, it does take a little longer that you would expect. 7/10

The food

I was really looking forward to the garlic, parmesan croutons, which smelled delicious while they were cooking.  The end result was a bit too subtle and a little more parmesan would have enhanced the flavour.  Having a mix of lettuces added a good dimension to the salad. The lime juice added a tangy flavour to the dressing and mixing the parmesan through with the dressing gave a lovely cheesy taste. I enjoyed the anchovies in the salad, but if you are squeamish about them you might find them overpowering. 8/10

Overall

Although not containing any particularly unusual ingredients, the combination of flavours created a pleasant salad.  I wouldn’t make this salad as a main dish, but it would definitely add a great dimension as a side dish. 7/10

With the seasons changing and a crisper feel to the air, thoughts turn to Halloween and pumpkins.  I was looking for a great pumpkin caesar salad recipe and could only find this Caesar Salad with Pumpkin Croutons and Spiced Pumpkin Seeds from The Local Palate, so I that’s what I chose!  The original is made with kale, but I chose to make it with romaine lettuce.

The food

The basic ingredients are fairly standard, but the pumpkin flesh and seeds add a lovely seasonal twist to a basic caesar salad recipe. The smell of the pumpkin seeds cooking was heavenly and I my mouth was watering before I had managed to finish preparing the recipe.  I used romaine lettuce rather than kale, so I’m not sure how much difference that would have made to the flavour of the finished salad.  The flavours were nicely rounded and the spicy pumpkin seeds tasted just as good as they smelled.  The pumpkin could probably have take a little more seasoning, but it all worked well together. 8/10

Overall

For a slightly different kind of caesar salad, this worked really well and is definitely worth a try when pumpkins are in season.  I think that there is more that could be done with the pumpkin itself and trying this recipe has inspired me to experiment with cooking pumpkins. 7/10

Telegraph Healthy Caesar Salad Recipe

The Telegraph Healthy Caesar Salad appealed to me, as it’s not your usual Romaine Lettuce, Parmesan and Croutons.  The recipe lost a few points for me, for the length of time it took to take prepare, it made up for it overall though with the flavours.

Clarifying the butter and slicing the lettuce (without them falling apart) is probably the hardest thing in the recipe.  There is nothing technically difficult, however there is a lot to juggle to make this complex recipe, which is why have given it slightly a slightly lower score.

Most of the time was taken roasting the tomatoes, although the pangrattato  also takes quite some time.  I don’t think the tomatoes need anywhere near as long as the recipe suggests and it could probably be completed in about half the time.

The food

What this recipe loses in preparation time, it more than makes up for in flavour.  The taste is quite complex and it is worth spending the time to make the pangrattato.  The pangrattato was quite fishy, so I would probably use slightly less anchovy fillets if I made it again. The roasted cherry tomatoes are sweet and work really well with the balsamic vinegar.  The dish was slightly too salty, so I would add salt sparingly.

As long as you have plenty of time to make this dish, then it’s definitely worth it.  It’s not an everyday dish, but for a special occasion it would make a lovely side dish.   I added pan-fried chicken breasts to make it a slightly more substantial meal.

Good Housekeeping Chicken Caesar Salad

I was brought up with Good Housekeeping recipes, so I was really pleased to see that they have a Chicken Caesar Salad recipe.

This was a very simple recipe, although the chicken needed to be pre-cooked as this isn’t included in the recipe.  The recipe does contain uncooked egg, so if you aren’t keen uncooked eggs you can use mayonnaise.

It only took about 10 minutes to prepare (as long as the chicken is pre-cooked).  The dressing took the longest. 7/10

The food

The chicken was fairly plain and could probably have done with more seasoning.  The croutons were very crunchy and frying them was definitely a nicer way to prepare them than in the oven.   The dressing was what stood out for me, the mustard was very discernible and for me this was the most authentic caesar dressing so far.   6/10

 

Overall

The main ingredients of the salad didn’t really stand out, although the croutons worked well.  For me the dressing was what made this recipe and I would definitely make it again. 7/10
