Gordon Ramsay’s Devilled Caesar Salad with Parma Ham

I have previously tried Gordon Ramsay’s Big Caesar Salad Recipe, so I was interested to see that there was a low-fat caesar salad recipe in his Healthy Appetite cookbook.   I rated his last recipe 7.75/10, so I was keen to see whether his Devilled Caesar Salad with Parma ham would get the same rating.

The recipe isn’t difficult, but does require frying the parma ham and toasting the ciabatta 7/10

The recipe doesn’t take long to prepare, but it takes about 10-15 minutes to make the dressing, fry the ham and ciabatta 7/10

The food

The dressing was low-fat and used natural yogurt as a base.  There was a little to much garlic in the dressing for me, so I would probably use a little less. The parma ham is quite salty, which overpowered the salad a bit.  Using less ham would give a better balance.  I haven’t used fresh  anchovy fillets in a salad before and they weren’t as strong as I thought they might be 7/10

Overall

As a lower-fat caesar salad, this was pleasant and if you rebalance the parma ham and garlic, then overall it’s a tasty salad.  The portion isn’t particularly large, so this is definitely a side salad 7/10

Skinny Caesar Salad – Ginger & Olives

As caesar salads can sometimes be high in calories, it’s always good to try a low fat version, to see whether the authentic caesar flavour has been captured.  This Skinny Caesar Salad from Ginger & Olives looked good.

The recipe is simple, but not particularly detailed.  It might have been useful to have some guidance on how long to cook the chicken for.  6/10

It didn’t take long to prepare, although the chicken does need to be cooked thoroughly.  7/10

The food

I wasn’t sure how the dressing would taste, using quark rather than a mayonnaise, but it was pleasant. The dressing does contain raw egg yolk, so it is best to avoid it if you are pregnant or would prefer not to eat uncooked egg.  I would probably have had a small amount of garlic in there just to add a balance to the vinegar.  The chicken was tasty, but there was no guidance on how much paprika and chilli powder to use.  If I was to make the recipe again, I would probably use a little more to give a bit more kick. I prefer romaine lettuce in my caesar salad, but the iceberg lettuce was crunchy. 6/10

Overall

For a low fat caesar salad, this is quite pleasant.  It wasn’t particularly rich and I wouldn’t say that the dressing was really a caesar dressing, but with a few tweaks I think it could be a little more authentic. The seasoning on the chicken added a nice flavour to the salad, which might otherwise have been a little bland. 6.5/10

This Low-fat Chicken Caesar Salad recipe from Taste.com.au, combines some of the traditional caesar salad ingredients, with some low-fat variances to produce a delicious and healthy chicken caesar salad.

The chicken is cooked in the oven, but doesn’t take too long.  I actually cooked the chicken for a little longer than the recipe suggested, as you need to be careful to make sure that it is thoroughly cooked.  7/10

The food

The croutons could have done with being at a slightly higher temperature to give a more golden colour, but for a low-fat option the flavour was very good.  Although there was very little prosciutto, it added a great flavour to this recipe. The chicken being steamed in a parcel, was lovely and moist and had absorbed the lemon and garlic.  The dressing was the best low-fat caesar dressing that I have tried so far, there were a lot of ingredients, but they all worked really well together to produce a light dressing, which still had the great caesar flavour. 8/10

Overall

If you are watching your weight, but still crave a great caesar salad, then this recipe is definitely a winner.  As there is no oil used, the dish is very light, but still maintains a fab mix of flavours and you don’t feel that there is anything missing. The dressing is great and it should be easy to make up in batches if you want something light to hand when the caesar salad cravings start. 7.75/10

Healthy Chicken Caesar Salad – Meals by Mel

Caesar Salads may look like the healthy option, but they do have a tendency to be quite high calorie, particularly if you are using an oil based dressing.  Having previously tried the Hairy Biker’s Warm Chicken Caesar Salad, I was keen to try another recipe that was a little lighter.

The Healthy Chicken Caesar Salad from Meals by Mel, seemed to fit the bill and I was interested to see whether the real caesar flavour would still come through despite the “healthy” option.

The recipe was extremely quick and light on washing up! The chicken, bacon and croutons are all cooked in the same pan and the dressing is prepared in a single bowl. 8/10

The food

The dish was delicious and I particularly enjoyed the poached egg.  I used pancetta rather than bacon, which added quite an intense flavour and it was interesting to have wholegrain croutons.  I was pleased that the croutons were pan-fried, as I particularly like the flavour that this gives them.  The dressing was pleasant, but not particularly rich.  I would have preferred a little more seasoning, particularly in the chicken, bacon and croutons. 7/10

Overall

This was billed as a healthy chicken caesar salad and as such it was a light caesar salad dressing.  I wouldn’t really call it a caesar dressing though and personally I think it would have benefited from a small amount of grated parmesan and garlic in the dressing. You could add a small amount and still keep the dressing fairly low-calorie, if that is what you prefer.  This is definitely a salad I would try again. 7.5/10

Martha Stewart Caesar Salad with Spicy Shrimp

I’m not familiar with Martha Stewart recipes, but the Caesar Salad with Spicy Shrimp recipe can be found on the Martha Stewart website.  There are a number of other great looking recipes on there, that I’m looking forward to trying. It’s always good to try an alternative to the classic chicken caesar salad recipe.

This recipe wasn’t at all difficult, care should be taken though to make sure that the tortillas don’t overcook. The dressing was very simple as the mayonnaise was pre-made. 8/10

Time taken to prepare

It took about 15 minutes in total.  There isn’t a great deal of preparation and both the tortillas and prawns take only a few minutes to cook. 8/10

The food

This was a spicy prawn recipe, so I wasn’t expecting the usual caesar flavouring.  I think that I probably used a little bit too much chilli powder on the tortillas, which made them a bit overpowering, they were also a little overcooked.  The prawns on the other hand could have had a little more seasoning.  The flavours were pleasant but the chilli was the most distinctive flavour.  The dressing was a little bland and the flavour was not particularly complex. 6/10

Overall

The salad was quick and simple but I think I was expecting a bit more.  If I made it again, I would use less chilli and make my own caesar dressing. The recipe gained points for simplicity and quickness, but lost points for flavour. This really is a simple caesar salad recipe. 7.25/10

I thought that this week I would try a wrap, so I found a great looking, simple recipe, which is the baker upstairs chicken caesar salad wraps.   As the ingredients are given in cups I had to convert to tablespoons and grams, I also halved the ingredients as I was only making two portions.

The recipe was very simple, although converting to tbsps and grams and reducing the recipe required some thinking about.  There is an art in wrapping the tortilla, but as long as you don’t overfill, it isn’t hard.

Time taken to prepare

This was quick to make, about 10 minutes, as the chicken was pre-cooked.  If you are cooking the chicken fresh for the recipe it would take considerably longer. I like that the dressing was made in a bowl and everything else was added to it.  It would probably have been even quicker if I had not needed to convert the ingredients and reduce the amounts.

There was a good balance in the recipe between the filling and the dressing.  I quite like anchovy fillets in my Caesar dressing and I might perhaps try adding an anchovy next time and some seasoning.

Overall

This is the first time I have made a Chicken Caesar Salad wrap and I would definitely do so again.  The flavours were well-rounded and it tasted as good as any shop bought wrap. Despite the low-fat mayonnaise, because of the chicken, oil and tortilla this isn’t a particularly low-calorie recipe, so probably one to avoid if you are watching your weight.

Hairy Bikers Warm Chicken Caesar Salad

I gave the Hairy Bikers Chicken Caesar Salad a try and 7/10.

The recipe has a good variety of ingredients, to create this healthy low fat caesar salad recipe (272 calories a portion).   Prep  takes a little more that 10 minutes, but overall it’s a quick recipe to make

This was very simple to prepare, nothing required any particular skill.  The key is to make sure that the chicken is flattened sufficiently, otherwise it will need to cook for longer. 8/10

Very quick to put together.  The chicken took the longest time to cook.

The food

The ingredients were all very fresh and worked well together.  The chicken was really juicy, although it needed a bit more cooking time than the recipe suggested.  I’ve never made a Caesar dressing before, so making a low-fat dressing as a first one was interesting.  The dressing while not rich did have quite a creamy texture and had a great parmesan flavour, but there was a bit too much garlic in it for me.  The ciabatta worked well in the place of croutons, but had a tendency to absorb the juices from the chicken and some was a little soggy. 7/10

Overall

I enjoyed the salad even though it was low-fat.  It was nice to have warm chicken, which was very juicy and had a great flavour.  If I made it again I would use less garlic. 7/10
