Caesar Club Sandwich – Food Network

The ingredients for this Caesar Club Sandwich from Food Network, really appealed to me.  The traditional caesar all crammed into delicious ciabatta bread. This is the first time that I have prepared a dressing using anchovy paste and I was interested to see how the flavour would differ to anchovies in oil.

I gave this recipe a fabulous 8/10!

The recipe is very simple, you could probably make the dressing without a food processor, but it is smoother if you use one. 8/10

There is quite a bit of prep for this dish, but most of the ingredients that need to be cooked, can be prepared simultaneously. I used boneless chicken breast, which didn’t take as long to cook as the recipe suggests. 7.5/10

The food

This caesar club sandwich is packed with fabulous flavours. The dressing is really tasty, it could probably have done with being a little bit thicker.  The flavours in the dressing were quite zesty and the anchovy paste seemed to add a slightly more smoky flavour than anchovy fillets. The pancetta and chicken work really well together and the flavours complimented each other.  The sun-dried tomatoes were strong, but as long as you enjoy their flavour, they are great in this dish.  The parmesan and rocket add a final caesar twist to this club.  I used individual ciabatta, which were lovely and fresh.  They were  quite small and with hindsight a bigger loaf might have worked better, to contain all the fabulous ingredients.  8.5/10

Overall

I thought this sandwich was amazing.  From the lovely fresh ciabatta, to the intense sun-dried tomatoes and the salty pancetta, every mouthful was a flavour packed winner.  I will definitely be trying this again and this recipe deserves the very high rating of 8/10.

This Low-fat Chicken Caesar Salad recipe from Taste.com.au, combines some of the traditional caesar salad ingredients, with some low-fat variances to produce a delicious and healthy chicken caesar salad.

The chicken is cooked in the oven, but doesn’t take too long.  I actually cooked the chicken for a little longer than the recipe suggested, as you need to be careful to make sure that it is thoroughly cooked.  7/10

The croutons could have done with being at a slightly higher temperature to give a more golden colour, but for a low-fat option the flavour was very good.  Although there was very little prosciutto, it added a great flavour to this recipe. The chicken being steamed in a parcel, was lovely and moist and had absorbed the lemon and garlic.  The dressing was the best low-fat caesar dressing that I have tried so far, there were a lot of ingredients, but they all worked really well together to produce a light dressing, which still had the great caesar flavour. 8/10

Overall

If you are watching your weight, but still crave a great caesar salad, then this recipe is definitely a winner.  As there is no oil used, the dish is very light, but still maintains a fab mix of flavours and you don’t feel that there is anything missing. The dressing is great and it should be easy to make up in batches if you want something light to hand when the caesar salad cravings start. 7.75/10

With the seasons changing and a crisper feel to the air, thoughts turn to Halloween and pumpkins.  I was looking for a great pumpkin caesar salad recipe and could only find this Caesar Salad with Pumpkin Croutons and Spiced Pumpkin Seeds from The Local Palate, so I that’s what I chose!  The original is made with kale, but I chose to make it with romaine lettuce.

The pumpkin flesh and seeds need to be cooked separately, which takes a little while and both have to be prepared in advance.  The dressing takes some time, but can be made while the pumpkin and seeds are cooking. This is definitely not a throw it together at the last minute dish. 6/10

The food

The basic ingredients are fairly standard, but the pumpkin flesh and seeds add a lovely seasonal twist to a basic caesar salad recipe. The smell of the pumpkin seeds cooking was heavenly and I my mouth was watering before I had managed to finish preparing the recipe.  I used romaine lettuce rather than kale, so I’m not sure how much difference that would have made to the flavour of the finished salad.  The flavours were nicely rounded and the spicy pumpkin seeds tasted just as good as they smelled.  The pumpkin could probably have take a little more seasoning, but it all worked well together. 8/10

For a slightly different kind of caesar salad, this worked really well and is definitely worth a try when pumpkins are in season.  I think that there is more that could be done with the pumpkin itself and trying this recipe has inspired me to experiment with cooking pumpkins. 7/10

Healthy Chicken Caesar Salad – Meals by Mel

Caesar Salads may look like the healthy option, but they do have a tendency to be quite high calorie, particularly if you are using an oil based dressing.  Having previously tried the Hairy Biker’s Warm Chicken Caesar Salad, I was keen to try another recipe that was a little lighter.

The Healthy Chicken Caesar Salad from Meals by Mel, seemed to fit the bill and I was interested to see whether the real caesar flavour would still come through despite the “healthy” option.

The recipe was extremely quick and light on washing up! The chicken, bacon and croutons are all cooked in the same pan and the dressing is prepared in a single bowl. 8/10

The food

The dish was delicious and I particularly enjoyed the poached egg.  I used pancetta rather than bacon, which added quite an intense flavour and it was interesting to have wholegrain croutons.  I was pleased that the croutons were pan-fried, as I particularly like the flavour that this gives them.  The dressing was pleasant, but not particularly rich.  I would have preferred a little more seasoning, particularly in the chicken, bacon and croutons. 7/10

Overall

This was billed as a healthy chicken caesar salad and as such it was a light caesar salad dressing.  I wouldn’t really call it a caesar dressing though and personally I think it would have benefited from a small amount of grated parmesan and garlic in the dressing. You could add a small amount and still keep the dressing fairly low-calorie, if that is what you prefer.  This is definitely a salad I would try again. 7.5/10

Grilled Chicken Caesar Salad Wrap – Jamie Cooks It Up

For a quick light lunch, I tried out the Grilled Chicken Caesar Salad Wrap recipe from Jamie Cooks It Up.  This includes a homemade Creamy Caesar Dressing.  The recipe took a little longer than I was expecting as the dressing and chicken took a little while.

The preparation and cooking was all very straightforward.  The dressing can be made in a liquidiser or food processor. Care needs to be taken that the chicken is throughly cooked through.  Don’t over fill the wraps, otherwise it will be difficult to fold them. 8/10

The creamy caesar dressing takes a little while, as it contains quite a few different ingredients.  Grilling the chicken, is not quick and there are quicker ways to cook the chicken. 7/10

The food

I was unable to get spinach tortilla wraps, so I used plain tortilla wrap instead.  The dressing was really creamy, although I didn’t use very much, I have some left over to use in other dishes.

The chicken breast was quite big and so was a little bit dry from grilling.  I prefer to butterfly the chicken breast and pan fry, as this tends to make it a little more moist and takes less time to cook. I don’t mind red onion, but I would omit it next time, as the flavour was a bit overpowering. 7/10

Overall

Other than my inexpert wrapping and a little bit too much onion, this was a really lovely recipe and one that I would definitely try again. 7.5/10

In search for the best caesar salad recipe around, I tried the Steak Caesar Salad recipe from Food Network by Mama’s Kitchen.  The recipe suggests using a ready-made salad kit, but instead I took the opportunity to try the Caesar Salad Supreme recipe from allrecipes.

Preparing the steak doesn’t require any particular skills, other than making sure that it doesn’t overcook or burn. 8/10

For the caesar salad the allrecipes website is extremely helpful as it it adjusts the ingredients, depending on how many portions you want to make.  It would be even better if the recipe also adjusted to the number of portions as well.  Using ready-made mayonnaise in the caesar dressing, means that you don’t have to make your own, which can be tricky if you haven’t made mayonnaise before.  It makes it a simple caesar salad dressing. 8/10

Time taken to prepare

The steak takes very little time to prepare and cook.  Be careful not to overcook the meat, as it will be tough. 8/10

Using ready-made mayonnaise cuts down on the time taken to prepare the dressing, which is really quick and simple.  Cooking the croutons adds to the time in this recipe, but it is definitely worth it. 7/10

The Food

The steak had a lovely flavour and was very tender, but it didn’t really stand out for me and  I think it would have been as nice, without the garlic.  If I was going to cook a steak caesar salad again, I think I would use a marinade to add more flavour. 6/10

The dressing was simple to make and because the website adjusted the ingredients, the proportions were exact.  I love croutons made this way.  Although they are a little higher in calories, if you only have a few, it’s definitely worth it.

I treated myself to a new grater, which grates the parmesan very finely. 8/10

The two recipes worked really well together. The steak was very tender and dressing of the caesar salad did not overpower it.  This was a lovely recipe which was very simple to make and tasted great.  6.75/10 for the steak and 7.5/10 for the caesar salad supreme.

There was nothing complicated about the recipe, although there were quite a few elements to juggle, to pull it all together.  The recipe specifies that olive oil should be added until the mixture emulsifies, if you don’t know what this means then you might have difficulties.

This took about 30 minutes to prepare, mainly because there is lots going on.  It’s definitely worth taking the time with this recipe, as it really adds to the flavours.

The food

The croutons were great in this recipe, probably the best recipe for croutons so far. Cooking the chicken this way is quick and still leaves the chicken very juicy.  The dressing was more of a mayonnaise than a caesar and the vinegar was quite distinctive.  The lemon juice should be used sparingly.

I really enjoyed this recipe.  There was a lot to do, but it is well worth it, if you have the time. The recipe does contain raw egg yolk, so probably best avoid it if your pregnant.  I would definitely try it again.
